Simon has an interest in personal injury, immigration and public law.

Simon trained as a solicitor with the Crown Office and Procurator Fiscal Service where he worked in the appeals unit and the High Court. While working as a procurator fiscal depute in the Highlands, he prosecuted hundreds of criminal cases and was also the sitting manager for the High Court.

Between 2012 and 2016, Simon worked in international human rights in Colombia with Peace Brigades International and Lawyers Without Borders Canada. He worked with threatened human rights defenders, provided training on international justice and contributed to a number of legal publications. He also undertook advocacy work before the Colombian Constitutional Court, United Nations, and the Office of the Prosecutor of the International Criminal Court in the Hague and New York.
